What you need:
- 9 inch spring-form pan
- Stand mixer
- 3 tablespoons butter
- Baking sheet
For the Crust
- 7 tablespoons butter
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- 1 cup flour
- pinch of salt
For the Filling
- 3 packages cream cheese, room temperature
- 3/4 cup sugar
- 1 tablespoon flour
- pinch of salt
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
What you do:
- With parents help start by greasing the inside of the spring-form pan with butter
For the Crust
- Beat the butter, sugar and vanilla together on medium speed.
- Add the flour and the salt and mix until just combined.
- Empty the mixture into the spring-form pan and press evenly into the bottom of the pan.
- Chill for 1 hour.
- Preheat oven to 350°F and bake crust for 15 minutes.
For the Filling
- Beat the cream cheese adding sugar a little at a time.
- Add flour, salt, sour cream and vanilla to cream cheese.
- Finally add eggs one at a time and beat until all combined.
- Making sure the crust is cooled, place crust baking sheet and pour the filling in.
- Bake for about 50 minutes or until the cheesecake is firm around the edges and jiggles in the center,
- Cool for 3 hours on counter and then refrigerate for at least 3 hours before serving.
