Hello, readers! I must tell you that I had a very interesting request recently. Someone who shall remain nameless came to me and asked me to prepare the most romantic dessert I could for a very important event. I wonder what it could mean.

Anyway, here is my favorite red velvet cupcake recipe. They make a perfect ending to a romantic evening.

What you need:

-          2 ½ cups flour

-          ½ cup unsweetened cocoa

-          1 teaspoon baking soda

-          ½ teaspoon salt

-          1 cup butter, softened

-          2 cups sugar

-          4 eggs

-          1 cup sour cream

-          ½ cup milk

-          1 (1 ounce) bottle Red Food Coloring

-          2 teaspoons Vanilla

 

Vanilla Cream Cheese Frosting:

-          1 (8 ounce) package cream cheese, softened

-          ¼ cup butter, softened

-          2 tablespoons sour cream

-          2 teaspoons Vanilla

-          1 (16 ounce) box icing sugar

 

 

-          Red Sprinkles

-          Paper cupcake liners

-          An adult assistant

 

What you do:

Have your adult assistant preheat the oven to 350°. Line two muffin pans with 30 paper cupcake liners.

In a medium bowl, combine flour, cocoa, baking soda and salt. In a large bowl, beat sugar and butter until well mixed. Add eggs one at a time. Add sour cream, milk, food coloring and vanilla. Slowly add in the flour mixture and beat until just mixed. Divide batter between 30 cupcake liners, filling to about 2/3 full.

Bake for 20 – 25 minutes. Allow to cool completely before frosting.

Frosting: Combine cream, butter, sour cream and vanilla. Mix well. Slowly add icing sugar to mixture and beat until smooth.

Frost cupcakes and add a dusting of red sprinkles to each.

 

These red velvet cupcakes are as rich and smooth as velvet. They are the ‘happily ever after’ of a romantic meal for two.
