Back to School Lunch: Taco Salad

 

 

 

 

 

 

What you need:

-          1 head iceberg lettuce, shredded

-          2 cups cheddar cheese, grated

-          2 lbs ground beef

-          1 package taco seasoning

-          2 tomatoes, chopped

-          1 onion, finely chopped

-          1 (16 ounce) bottle Catalina dressing

-          Individual serving sized bags of tortilla chips

You will need an adult assistant to help you with this recipe.

What you do:

Have your adult assistant brown the ground beef and drain off fat. Add taco seasoning and one cup of water. Simmer over medium-low heat for ten minutes. Let meat cool.

Combine all ingredients except chips.

Divide mixture into half cup servings and store in plastic containers.

When ready to eat, crush chips in bag. Open bag and add salad mixture to bag. Stir and eat salad from bag.

    TACOS!!!!!!!!!!!!!!! I HEART TACOS AND TACO SALAD!!!!!!!!!!!!!!!!!! :mrgreen: I just hope I can eat tacos and taco salad when I get braces. I might be getting them soon. What I don’t like is I won’t be able to eat caramel. but I CAN still eat chocolate! (I think.)
