Polly Panda is a HUGE fan of these cookies – when bamboo crisps aren’t available, they’re her go-to treat!
- 1/2 cup butter, softened
- 3/4 cup white sugar
- 1 egg
- 1 tablespoon lemon zest
- 1 1/2 teaspoons fresh lemon juice
- 3/4 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 1/4 cups all-purpose flour
Directions
- Have your adult assistant preheat oven to 350 degrees F (175 degrees C).
- Beat the butter and sugar until fluffy. Beat in remaining ingredients except flour. Make sure the ingredients are well-blended.
- On low speed, beat in flour just until blended.
- Drop by rounded teaspoonfuls 1 1/2 inches apart on ungreased cookie sheets. Sprinkle with sugar.
- Bake 10 to 12 minutes until edges are lightly browned.

(if those two dots and the curve did not work they were supposed to be a smiling face.)
I love lemon! Yum!
One of my best friends will literally, suck on lemons! And limes! I don’t understand how she does it without puckering. She never even puts sugar on them! Next time she comes down for a visit I will make her some. I think she’d like these.
I tried that. Each time I sign up I use a different username and password, because if I try to use that one again, (username) it says that someone is already using that which is me. Or maybe it is the email that is wrong, but then I sent it to my mom’s email and it didn’t work. It’s so confusing!
webkinzfan98,
try looking in your spam folder in your email. Thats where I got the email when I made an account. Hope this helps! :)
Ooooh, I can’t wait to try them. Have tried other lemon item recipes, but nothing rocked my world. I wish this recipe was more user friendly print wise. Copy & paste doesn’t work well from here…
