Holiday Recipe: Shortbread Cookies

 

Hi! It’s Polly again. Ms. Cowoline gave me her favorite recipe for Shortbread Cookies for the Secret Santakinz Gift Exchange.

 

What you need:

  • 3 cups cake flour
  • ¾ cup icing sugar
  • ¼ teaspoon salt
  • 1 ½ cups butter, softened

 

What you do:

  • Preheat oven to 325°.
  • Combine flour, sugar and salt in a large bowl.
  • Cut the butter into pieces and add to the flour mixture by hand, rubbing it into the dough until it holds together.
  • Press the dough in two 8” cake pans and prick the dough a fork to make a decorative pattern.
  • Bake for 40 minutes. Upon removing it from the oven, immediately cut it into wedges while it’s still warm then transfer them to a rack to cool.
  • Store them in the fridge in a tightly covered container.

    To everyone who says this looks like a pie, you are right. This is the shape of real Scottish shortbread. The triangles are called petticoat tails. You can also make them in a square pan and cut them into bars, but I think Petticoat tails are prettier.

    These turned out perfectly. Make sure that you use real butter and not margarine

    Can someone explain to me what they mean, when they say rub the butter in the dough ? lilspring ????

      You put the butter and the flour in the bowl and kind of squeeze it with your fingertips. The idea is to make it into what looks like baby peas in powder. To make the shortbread light and fluffy, try not to work it too much or get it too warm while you are rubbing it. Good Luck. These are worth making.

    Shortbread is one of my favorites and this recipe sounds really easy. I’m going to line my cake pans with foil to make it easier to get it out of the pan. I do this often, and it even makes the clean-up easier.
