Healthy Snack: Butternut Squash Soup

 

 

 

 

 

 

What you need:

-          1 butternut squash, peeled and chopped

-          1 potato, peeled and chopped

-          2 onions, chopped

-          2 garlic cloves, minced

-          2 teaspoons curry paste

-          2 teaspoons vegetable oil

-          4 cups chicken or vegetable stock

-          Salt and pepper to taste

-          An adult assistant to help you with this recipe

What you do:

  1. Have your assistant heat the oil over medium heat. Add the onions, garlic, potatoes, and curry paste and cook for about five minutes, stirring often.
  2. Add squash and stock.
  3. Bring to a boil, then reduce heat and cover. Let simmer for 20 minutes.
  4. In batches, puree soup in blender.

This soup is an easy and delicious way to introduce vegetables to your diet.

    It actually looks pretty good. I love squash. Not a single bad thing either. I might just try the recipe. It may not look that good to most people. But give it a try if you don’t like it then don’t eat . Most people just go by looks.

    I just got back from the store I bought the squash to make this recipe. I have a ? can you use curry powder in place of the paste and if so about how much or should I send for the paste. I plan on having this tomarrow.

    My Mom has made this for Thanksgiving the last couple years and it’s my fav part of the meal now! mmmm topped with some scallions and/or toasted pumpkin seeds!

    Well… I REALLY don’t like squash… it literally makes me gag… but maybe it would taste good with the other ingredients! I love soup and stew-especially healthy ones. My mom makes this soup with lentils, (lots of fibre!) peas, sweet potatoes, carrots, regular potatoes, and I’m sure a lot more! At first it looked disgusting, but I tried it anyway, and it was delicious!
