What you need:
- 1 butternut squash, peeled and chopped
- 1 potato, peeled and chopped
- 2 onions, chopped
- 2 garlic cloves, minced
- 2 teaspoons curry paste
- 2 teaspoons vegetable oil
- 4 cups chicken or vegetable stock
- Salt and pepper to taste
- An adult assistant to help you with this recipe
What you do:
- Have your assistant heat the oil over medium heat. Add the onions, garlic, potatoes, and curry paste and cook for about five minutes, stirring often.
- Add squash and stock.
- Bring to a boil, then reduce heat and cover. Let simmer for 20 minutes.
- In batches, puree soup in blender.
This soup is an easy and delicious way to introduce vegetables to your diet.

This recipe is REALLY NOT for me. am allergic to almost all types of squash and onions! Not to mention Garlic. I am allergic to a LOT of stuff. :-(

Eww! I’m not exactly a fan of veggies. But I kinda like fruits! I eat banana pancakes, pumpkin muffins ( is a pumpkin a fruit because of the seeds?) Mango citrus juice, real fruit punch and stuff like that but NOT veggie anything! Even if someone hid vegtables in food, I’d still taste it and not eat it! Anyway it looks like pumpkin pie filling in a bowl ( The only pie I eat is pumpkin pie!)
WKN Pumpkin is a squash, and eggplant is a fruit ( I always thought as a veggie) which I learned in webkinz on quizzy’s
You know a tomato can be a fruit or a vegetable, and we have more than 500 Romane tomatoes and Cherry tomatoes put together in our backyard garden!!! :-D
OH Yummy! Butternut squash is my favorit squash. I have never had it as a soup, sounds good, I will have to try it. :)
Why onions?
They say 25% of the populations is allergic to onions,
and about another 25% have degrees of food sensitivity & don’t realize that’s their problem.
And onions are hidden in so many foods.
I know because my mom & sis have to avoid them.
It’s hard work.
And we’re back in school 4 weeks now, yet you still have summer activities all day.
Not fair to us, we had been out WEEKS when you started.

I am now not one of those 25% because you gave me the answer to my problem – I have a weird degree of food sensitivity to pulp!! Its just bleh anyway.

It looks nice and healthy, but Pumpkins are so expensive at the moment (in Australia due to floods in January)so I will have to take down the recipe and make it later in the year :)
