Molly’s Dad’s Banana-Blueberry Muffins

 

 

 

 

 

 

 

Molly’s camp stay is about to get a lot tastier with this special delivery from her dad. Here’s hoping she shares some of her favorite muffins with her fellow campers!

What you need:

Muffins

-          1 egg

-          ½ cup granulated sugar

-          6 tablespoons melted butter

-          3  bananas, mashed

-          1 tsp pure vanilla extract

-          1 ½ cups flour

-          1 teaspoon baking powder

-          ½ teaspoon salt

-          1 ½ cups fresh blueberries

Topping

-          ¼ cup packed light brown sugar

-          ¾ cup pecans, chopped

-          1 tablespoon flour

-          2 tablespoons melted butter

You will need an adult assistant to help you with this recipe.

What you do:

Preheat oven to 350 F. Grease a 12 muffin muffin tin.

Combine all topping ingredients in a small bowl and mix well.

In a medium bowl combine flour, baking powder and salt. In another medium bowl, combine mashed bananas and eggs. Stir in sugar and vanilla and mix well. Add melted butter and stir well.

Add flour mixture and blueberries to banana/egg mixture. Stir until just combined.

Spoon the batter into the muffin tin. Sprinkle each muffin with a bit of the topping mixture.

Bake for 25 to 30 minutes, until muffins are golden brown. Let stand for a few minutes before removing muffins to a cooling rack.
