Roberta here with a tasty summer recipe: ice cream sandwiches! I just LOVE ice cream sandwiches. They combine two of my favorite things: ice cream and cookies! Here’s what you do!
What you need:
Store bought or homemade plain chocolate sugar cookies, vanilla ice cream, chocolate sprinkles (optional)
What you do:
- Let the ice cream sit on the counter for about 10 minutes to soften up a little bit.
- Place chocolate cookies on a cookie sheet.
- Put a scoop of ice cream on top of each cookie.
- Top each scoop of ice cream with another cookie.
- If you like, roll the sides of the ice cream sandwiches in chocolate sprinkles
- Put them in the freezer to firm up
Serve and enjoy!

These are great & a fun thing to do. Chocolate chip cookies (especially homemade or the slice & bake kind) make a great ice cream sandwich too! I’ll have to do these with my grandkids over the Summer. cinderlou9
