School Lunch Recipe: Chicken Caesar

 

 

 

 

 

 

 

Caesar Salad is rich and delicious and makes a perfect lunch for this time of year when it’s still pretty warm outside. By adding a sliced chicken breast, you’ve got a tasty and nutritious lunch.

 

What you need:

-          1 cooked chicken breast, sliced

 

Salad

-          2 cups romaine lettuce, torn into bite sized pieces

-          ¼ cup Caesar croutons

-          1 tablespoon bacon bits

-          1 tablespoon grated parmesan cheese

-          2 tablespoons dressing (see recipe below)

 

Dressing

-          ¼ cup olive oil

-          3 tablespoons mayonnaise

-          2 tablespoons grated parmesan cheese

-          1 tablespoon white wine vinegar

-          1 garlic clove, crushed

-          1 teaspoon Dijon mustard

-          1 teaspoon anchovy paste

-          Dash of salt and pepper

 

-          An adult assistant

 

What you do:

To make the dressing, combine all ingredients in a small jar and shake well.

To make the salad, toss the lettuce, bacon and parmesan cheese together and store in a sealed Tupperware container. To keep them crunchy, store croutons in a separate small container and in another small container store 2 tablespoons of dressing. Put sliced chicken in another container and use a cold pack in your lunch bag to keep it all fresh.

At lunchtime, toss together the salad, croutons and dressing, and top it with sliced chicken then dig in!

    Mmmm now im hungry 4 a caesar salad. I love caesar salad its so good. Dats a super awesome idea Ganz. I always make these bad chicken salad sandwiches. But since this is a huge new year 4 me i think ill change it up and make a wrap or pasta or a caesar salad or tomato soup. At school, I buy my lunch on days they have nachos and tacos but i bring my lunch sometimes maybe ill get a caesar sald in school. :)

    Sounds good except for the anchovy paste. I absolutely hate anchovies. Might try this and leave the paste out.

    I would love to try it but in my case the salad might go bad. I’m in middle school and its HOURS until lunchtime. Plus the dressing might go bad to. But if you have a Pack-it (as seen on t.vs) it might work. B.T.W~ I want a Pack-it!! ~Snickerz LOVE~ AKA~ Cupcake Love;)

    This looks yummy! Except the chicken would be cold because at my school it takes 20 minutes to wait in line to heat something up…which means only ten minutes to eat!         I actually went to Wendy’s on my vacation, and I ordered this. It was really good! I don’t pack my school lunches, I just take whatever the school offers. But on some days, it’s an exception, since some of the lunches are blech! But I’m going to 6th grade this year, and I heard the cafeteria lunches are better. (info from @RW’s sister). ~§ugªr☾☼♏εէ☄☄☄

          @SugarComet – I don’t enjoy the school’s food at all, because it’s always greasy, and unhealthy. So, that’s why I like to pack my own lunch, because I think that it’s more better for you and more fresh than school’s lunch. And if people didn’t know, school food comes from a freezer, says my brother, and that could be true. ✖Ⓒⓗⓘⓒⓐⓖⓞ Ⓜⓐⓓⓔ✖

            One time Northwestern bought lunch at school, and by the time she got through the line, there were only five minutes left to eat. And ceaser salad dressing is very high in calories, so if it comes in a container on the side, don’t use all of it
