Healthy Snack: Zucchini Bread

What you need:

-          2 eggs

-          2 teaspoons vanilla

-          3 cups grated zucchini

-          2/3 cup butter, softened

-          2 teaspoons baking soda

-          ¼ teaspoon salt

-          ½  teaspoon nutmeg

-          2 teaspoons cinnamon

-          3 cups all-purpose flour

-          1 1/3 cups sugar

-          1 cup chopped walnuts

-          An adult assistant to help you with this recipe

 

What you do:

  1. Have your adult assistant preheat the oven to 350°.
  2. In a medium bowl combine eggs, vanilla, zucchini and butter.
  3. In a large bowl combine sugar, flour, baking soda, salt and spices.
  4. Slowly add wet ingredients to dry mixture and mix until just moistened.
  5. Stir in walnuts.
  6. Grease two 4×8 loaf pans.
  7. Pour batter into pans and bake for 1 hour.
  8. Cool for ten minutes and remove from pans.

When loaves are cool, dig in!

    It’s better without the nuts. It doesn’t need them anyway. It’s a dessert this way, people.

    Thanks, 90flowerpots! I use coconut oil sometimes too but my sister is allergic to it, so she sometimes feels left out.

    Sorry, I’m crazy about health here. Anyway, This is pretty healthy except I would use wheat flour and coconut oil instead of butter. I do that all the time and it comes out perfect! I would just make sure all the ingredients are organic and not GMO.
    (Genetically modified organisms) Call me weird if you want to, but that’s just me. : )

    This recipe sounds pretty good, but MY recipe is different, here it is:
    3 cups flour
    2 cups sugar
    1 teaspoon kosher salt
    half a teaspoon baking powder
    1 teaspoon baking soda
    3 tablespoons cinnamon
    1 cup oil
    3 eggs
    3 teaspoons vanilla
    2 cups zucchini
    1 cup nuts (optional)

    Then you just mix it all together and put it into 2 greased and floured 4 x 8 bread pans and bake @ 300 degrees for 1 hour and 45 minutes.

    It is really delicious! :-D Expecially with a lot of butter ( I know, butter is not very healthy but…) TTYL!
