Pumpkin Cake
Throwing a Halloween party? This cake makes a terrific dessert. What you need: - Two packet of chocolate cake mix - Two jars of icing - Yellow food coloring - Red food coloring - Green food coloring - Ice cream cone cup - Grape fruit leather - Bundt pan - Wax paper or parchment What you do: 1. Bake one cake according to directions in Bundt pan and allow to cool. Repeat with other cake. 2. Turn out cakes, flip over and cut off the top (the wide end), to make a flat surface. 3. In a small bowl, mix about a ¼ cup of the icing with green food coloring. Paint bottom and sides of ice cream cup with green icing. 4. In a large bowl, mix remaining icing with yellow and red food coloring to form orange. 5. Giant Halloween Spider Web Cookie
Chef Sophia here with a fun (and delicious) idea for Halloween: a giant spider web cookie! Sounds interesting, right? Here’s what you need: Batch of chocolate chip cookie dough Round cookie sheet Cup of chocolate chips Plastic sandwich bag Candy coated chocolate pieces Adult assistant Here’s what you do: Press the cookie dough onto the round cookie sheet (you can use parchment paper underneath so it’s easy to remove the cookie). Have your adult assistant bake the cookie. Let the cookie cool when it’s done. Have your adult assistant melt the chocolate chips in the microwave. Let the chocolate cool down a little bit, and then pour it into your plastic sandwich bag. Cut a tiny hole in one corner of the bag. On your big cookie, draw a spider’s web. Add the candy coated chocolate pieces as spiders! Share your cookie with friends. You can cut it up like a pizza!
Road Trip Recipe: Healthy Homemade Tortilla Chips
What you need: - 1 package small whole wheat tortillas - Non-stick cooking spray - Salt - An adult assistant What you do: Preheat oven to 400°. Lightly spray both sides of each tortilla with cooking spray and cut into six wedges. Place tortillas on baking trays and sprinkle lightly with salt. Bake for 8 minutes, watching after 5 minutes to make sure they don’t brown too much. Once they have cooled, store your tortilla chips in an airtight container.
Road trip recipe: Trail Mix
Between Elwin touring with Kinzville Sings!, Plumpy and Charles enjoying their honeymoon and the Webkinz Van making its rounds, August is the perfect time to make your own snacks to take on the road. Here is a simple snack you can throw together in just a few minutes. What you need: 2 cups peanuts 1 cup roasted almonds 1 cup roasted cashews ½ cup pistachios ½ cup chocolate m&ms ½ cup peanut m&ms ½ cup raisins ½ cup dried cranberries What you do: Combine all ingredients in a large bowl. Store in an airtight container.
Two Sweet Marshmallow Recipes
Everyone has had a great time collecting Marshmallows this summer! Here are two terrific Marshmallow recipes you can make for yourself (or a friend)! Marshmallow Pretzel Wands What you need: 6 large marshmallows, ½ cup white chocolate chips, 6 large pretzel sticks, colored sugar or sprinkles, waxed paper, grown up assistant What you do: Have your adult assistant help you melt the white chocolate chips (you can do this in the microwave. Just tell your adult assistant to check them every 15 seconds or so to see how they’re doing and give them a stir). Put a piece of waxed paper onto a plate or cookie sheet. Stick the pretzel stick into your large marshmallow. Dip the top of the marshmallow into the melted chocolate. Dip the melted chocolate covered marshmallow into the sprinkles. Put the marshmallow pretzel wands onto the waxed paper and wait for the chocolate to firm up. Tasty Berry Parfait
Make a tasty berry parfait! What you need: ½ cup whipped cream, ½ cup frozen strawberries, ½ cup frozen blueberries, ½ cup frozen raspberries, 2 scoops vanilla frozen yogurt, blender, adult assistant, glasses or parfait dishes Makes 2 What you do: Put all the berries and the whipped cream into the blender. Have your adult assistant help you with the blending. When the berries and whipped cream are blended, layer that mixture in a parfait cup with the yogurt (layer of berries, layer of yogurt, layer of berries, layer of yogurt, etc.). Serve it up and enjoy!
Summertime Recipe: Fruit Salad
Fruit salad makes a healthy and refreshing summer dessert. What you need: - 3 peaches, sliced - 3 bananas, peeled and sliced - 1 pint strawberries, washed and halved - 1 cup blueberries, washed - 2 tablespoons pineapple juice What you do: Toss all the fruit together in a big bowl with the pineapple juice. You can adapt this salad to your own tastes by substituting any of the ingredients with fruits of your choosing.
Roberta’s Yummy Ice Pops
Hey everyone! Roberta here with a bit of a funny story to share. So Molly dropped Millie off yesterday because she had to head to the library with Polly, and I (foolishly?) agreed to babysit while she was gone. Everything started off great! I told Millie that we were going to make our very own ice pops. She was super-excited! I told her that we were going to put some berries, yogurt and sugar into the blender and mix it up. She added the ingredients, but I realized that we didn’t have quite enough sugar. I told her to wait a sec while I got it from the pantry. Unfortunately, Millie didn’t quite understand. And that’s why she pressed the ‘blend’ button while I was out of the room. And while the lid was noticeably missing from the blender. And that’s why part of the kitchen wall is now a very nice violet-pink color. Anyway, I cleaned up as best I could and we tried the recipe again (with me standing right next to Millie the WHOLE time) and thankfully the pops turned out fantastically.
